Raw Sweet Chilli & Ginger Thai Salad

The perfect lunch or dinner and a great way to eat a variation of raw veggies! The sweet chilli and ginger dressing on this raw Thai salad is delicious! 


  • 1 cup thinly sliced raw broccoli
  • 2 spiralized raw zucchini's
  • 2 cups shredded red cabbage
  • 1 cup organic tofu (optional - I personally do not eat tofu. This salad is delicious with or without.)
  • 1 cup mung beans
  • 1 cup fresh coriander
  • 1/2 cup sliced red capsicum
  • 1/2 crushed raw peanuts
  • 1/4 cup black and white sesame seeds

Method

If having tofu, cut the tofu into cubes and heat in a pan. Combine all ingredients in a salad bowl.

Vegan Thai Dressing

  • 1/4 cup almond butter
  • 2 tbs tamari
  • 2 tbs pure maple
  • 1 tbs sesame oil
  • 1 tbs peanut oil
  • 1 - 2 tbs filtered water
  • 1 tbs sweet chilli sauce
  • 1 tbs grated fresh ginger
  • 1 clove garlic
  • Juice of 1 lime

Blend all ingredients until smooth. Combine through the raw salad and serve.
