Creamy GF Noodles W/ Marinated Cherry Tomato Salad

This makes a beautiful meal... A flavoursome salad with the beautiful aroma of fresh seasonal basil and garden cherry tomatoes paired with creamy gluten free quinoa noodles.


Marinated Cherry Tomato Salad

Note: You will need to marinate the tomato salad for at least 2 hours before serving.

Ingredients

  • 4 cups cherry tomatoes, cut into halves
  • 1 cup chopped fresh basil
  • 1/2 red onion, thinly diced
  • 1/4 cup sliced spring onion

Combine all ingredients in a salad bowl..

Vinaigrette Dressing

  • 2 tbs apple cider vinegar
  • 3 tbs olive oil
  • 2 cloves crushed garlic
  • 1 tsp pure maple
  • Squeeze of lemon

Method

  1. Place all ingredients in a small jar.
  2. Seal the lid and shake until well combined. Pour over salad.
  3. cover the salad and place in the fridge for at least 2 hours to let the flavours marinate.

 

Creamy Quinoa Noodles

Ingredients

  • 1 packet of quinoa noodles (or any gluten free noodles)
  • 1 cup cashews (soaked in boiled water for at least one hour or over night in cold water)
  • 3/4 cup nut milk
  • 1/4 cup nutritional yeast
  • 1 tbs apple cider vinegar
  • 1 tsp pure maple

Method

  1. Cook the noodles as per instructions
  2. Blend all ingredients in a high powered blender until smooth. If to thick, add a little water for desired consistency.
  3. Pour and gently mix through cooked noodles
