Brown Rice Green Thai Salad

Thai lovers! This is such an easy, filling salad to make with a beautiful burst of flavour!


Ingredients

  • 1 and 1/2 cups of cooked organic brown rice
  • 2 cups raw chopped broccoili
  • 1 cup fresh red capisum, diced
  • 1 cup fresh snow peas (or frozen peas)
  • 1/2 cup chopped pea sprouts
  • 1/2 cup fresh coriander
  • 1/4 cup raw, chopped unsalted peanuts

Method

Combine all ingredients together in a large salad bowl.

Green Thai Dressing

Ingredients

  • 1 cup coconut cream
  • 2 tbs pure maple
  • 2 tbs green thai curry paste
  • 1 tbs fresh lemongrass, finely chopped
  • 1 tsp fresh ginger, finely chopped

Method

Whisk all ingredients together, taste and adjust if needed (more maple etc). Combine through salad and mix well. Serve topped with fresh coriander and raw crushed peanuts.
