Raw Zucchini Pasta

I was in my home town of New Zealand when I created this salad and it was a big hit with the whole family! The almond parsley dressing is amazing and with the toasted pine nuts and sesame seeds, raw noodle salads don't get much better!


Ingredients

  • 3 green zucchini's, spiralized
  • 3 yellow zucchini's, spiralized
  • 1 green capsicum, diced into small cubes
  • 1/2 cup spring onions
  • 1/2 cup fresh parsley
  • 1/4 cup toasted pine nuts and sesame seeds

Method

Combine all ingredients in a salad bowl.

Creamy Parsley Dressing

  • 1 cup fresh parsley
  • 1/3 cup almond butter
  • 1/3 cup water
  • 2 small garlic cloves, diced
  • Juice of 1 large lemon
  • 1 tsp lemon zest
  • 1 tbs pure maple

Method

Blend all ingredients until smooth - it should be a thick and creamy consistency but if it is too thick, add a little more water.. Mix through the salad and garnish with toasted pine nuts.
