Basil Pesto Potato Salad

Basil Pesto Potato Salad 

Who loves freshly made basil pesto! The aroma of the fresh basil is so beautiful and when combined with steamed red skin potatoes, it's a sure family favourite!


Ingredients

  • 6 large red skin potatoes
  • Fresh basil leaves

Leaving the skins on, cut the potatoes into cubes and steam until soft.

Creamy Vegan Basil Pesto

Ingredients

6 cups fresh basil leaves
1/2 cup olive oil
1/3 cup chopped macadamia nuts
1/4 cup nutritional yeast
1/4 cup pine nuts
2 cloves garlic, chopped
1 tablespoon fresh lemon juice

Method

Blend all ingredients in a food processor until smooth. Gently mix through the steamed potatoes and serve.
