Rainbow Nourish Bowl


This is one of my favourite ways to eat the rainbow in pure plants! It's all about filling your bowl with a variation of plants and drizzling an epic dressing on top! For this bowl, I choose a creamy almond and coconut vinaigrette - and it was amazing! 

Bowl Ingredients

  • Cherry tomatoes
  • Roasted pumpkin in rosemary 
  • Roasted baby potatoes
  • Snap peas
  • Macro greens
  • Alfalfa sprouts
  • Radish sprouts
  • Pea sprouts
  • Pumpkin seeds
  • Avocado
  • Chia seeds
  • Sauerkraut 
  • Fresh mint and rosemary

Almond and Coconut Vinaigrette

Ingredients

  • 3 tbs almond butter
  • 2 tbs coconut yoghurt
  • 1 and 1/2 tbs apple cider vinegar
  • 1 clove garlic, finely grated
  • Juice of 1 small lemon (half a big one)
  • 1 tbs pure maple syrup
  • 1 tsp olive oil
  • filtered water (depending on desired thickness, start with 1 - 2 tbs and add more if needed)

Whisk all ingredients together in a small bowl, taste and adjust if needed! Pour over nourish bowl and enjoy!
